Brazilian Cheese Bread
Ingredients
- 4 large Eggs
- 2 cups grated Parmesan cheese
- 2 cups tapioca flour (recommend Bob's Red Mill)
- 1 1/4 cup whole milk
- 1/2 cup vegetable oil
- 1/2 tablespoon kosher salt
Instructions
- Preheat the oven to 375 degrees.
- Coat a 24 mini muffin pan with non-stick cooking spray. Mix eggs, cheese, tapioca flour, milk, oil and salt in a blender for 30 seconds at medium speed until a smooth batter is formed. Pour batter into muffin tin - filling to the top of each. Bake for 20 minutes or until light golden color and doubled in size.
