Green Goddess Dip
Ingredients
- 1 bunch watercress, washed, spun dry, stems removed and discarded
- 1 cup (tightly packed) fresh basil leaves
- ½ cup (tightly packed) coarsely chopped fresh chives
- 1 large clove garlic, peeled, trimmed and chopped
- freshly grated zest of 1 lemon
- freshly squeezed juice of 1 lemon
- ½ cup mayonnaise
- ¼ cup sour cream
- 2 anchovy filets
- salt
- freshly ground black pepper
Instructions
- In the work bowl of a food processor fitted with the steel blade combine the watercress, basil, chives, garlic and lemon zest. Pulse until chopped.
- Add the lemon juice, mayonnaise, sour cream and anchovy filets. Process until smooth. Season to taste with salt and freshly ground black pepper.
- Transfer to a bowl and serve with fresh vegetable crudités.
