Roasted Onion and Blue Cheese Dip
Ingredients
- 2 large yellow onions, peeled, trimmed and thickly sliced
- olive oil
- salt
- freshly ground black pepper
- 1 cup sour cream
- ½ cup mayonnaise
- ½ cup crumbled blue cheese
Instructions
- Preheat a ribbed stovetop grill pan over medium heat.
- Brush both sides of the onion slices with olive oil. Season with salt and pepper. Grill the onions until well browned, caramelized and soft, about 6 to 7 minutes per side. Remove the onions from the pan and allow to cool.
- Transfer the onions to the work bowl of a food processor fitted with the steel blade. Process until finely chopped. Add the sour cream, mayonnaise and blue cheese. Process until smooth. Season to taste with salt and pepper.
- Transfer to a bowl and serve with fresh vegetable crudités.
