Sauteed Quinoa with Swiss Chard
Ingredients
- 8 ounces bacon, finely diced
- 4 large cloves garlic, peeled and chopped
- 1 medium yellow onion, peeled and chopped
- 2 yellow bell peppers, stemmed, seeded and chopped
- 1 bunch Swiss chard, washed, trimmed, stems removed, leaves cut into ¼-inch thick slices
- Salt
- Freshly ground black pepper
- 4 cups cooked red quinoa
- 1 tablespoon olive oil
Instructions
- 1. In a large sauté pan cook the bacon over medium heat until it is lightly browned and has rendered its fat, about 8 to 10 minutes. Add the garlic and cook for 30 seconds. Add the onion and peppers and cook until the onion is lightly golden brown, about 8 minutes.
- 2. Add the Swiss chard and cook until it is tender, about 7 minutes. Season to taste with salt and freshly ground black pepper.
- 3. Stir in the cooked quinoa and olive oil and sauté for 1 minute.
- 4. Taste and adjust seasonings.
- 5. Transfer the quinoa to a heated bowl and serve right away.
