Smoked Salmon Coulis
Ingredients
- 8 oz. smoked salmon, finely diced
- ½ cup diced cucumber
- 1-2 Tablespoons chipotle pepper, finely diced
- ½ cup red onion, finely diced
- Salt and pepper
- ¼ cup spicy tomato juice
Instructions
- Combine all ingredients and chill at least 4 hours or overnight. Serve with crackers, toast points, or over mixed greens or fill endive with the mixture.
